Ingredients:
2-3 portions
- Spelt grits (boiled or swollen in a thermos), 100 g
- Tomatoes, 150 g
- Mozzarella mini, 150 g
- Basil leaves, 50 g
- Linseed oil, 2-3 tbsp.
- Salt, 1/3 tsp.
- Ground black pepper, 1/3 tsp.
Ingredients for pesto sauce:
- 50 g of basil
- 50 g of walnut kernels
- 60 ml of linseed oil
- 40 g of Parmesan cheese
- 1 pinch of salt
- 1 clove of garlic
- 1 spoon of natural apple cider vinegar
Preparing:
- Boil spelt grits in salted water (spelt to water ratio 1:2) until soft. Cool to room temperature.
- Cut the tomatoes.
- Cut the basil leaves into thin strips or tear them.
- Add spelt grits, tomatoes, mozzarella, basil to a salad serving bowl. Add linseed oil, salt, black pepper.
- If you want a richer taste, you can make a walnut-based pesto sauce: grind basil, walnuts, garlic and parmesan in a pestle and mortar with salt, add apple cider vinegar and linseed oil.
