Pancakes with apples

"On weekends, pancakes are king for breakfast in our family. These pancakes with apples come from childhood and I think many are really familiar, only I offer a slightly healthier version of pancakes, additionally flavored with Greek yogurt with blueberry powder." - Inga from Mamos restoranas

Ingredients:

 

For 1 serving you will need:

  • 100 g of kefir (room temperature)
  • 1 egg
  • 100 g of whole grain spelt flour
  • ⅓ tsp. a teaspoon of soda
  • 1 large apple

 

It would be better if the kefir and the egg been at a room temperature, you can even warm the kefir a little - really, it's all for the sake of fluffier pancakes.

 

Preparing:

  • Pour kefir into a bowl, add an egg and beat it lightly. Add sifted flour and baking soda, mix everything with a spoon until smooth. The mass will be very thick.
  • Wash the apple, peel it and grate it through a beetroot grater.
  • Add the grated apple to the dough.
  • Add a teaspoon of coconut oil (or other vegetable oil) to a heated pan, add the dough with a spoon and smooth a little.
  • Fry on medium heat for a couple of minutes on each side.

These pancakes are best eaten with Greek yogurt and berries.

 

Greek yogurt sauce:

Ingredients:

 

  • 100 g of Greek yogurt
  • ⅓ tsp. a teaspoon of blueberry powder
  • a drizzle of maple syrup

 

 

Preparing:

  • We mix all the ingredients to a smooth mass and we have a fantastically tasty and amazingly colored sauce.
